Lemon Poppy Seed Cookies…*

For my Fat Tuesday, I wanted to make something opposite to what you might expect. I never really liked Paczkis. Crazy, I know. I’d rather indulge in something lighter and more satisfying—something that I can have more than one of… without feeling bloated like a balloon. This is exactly why I decided to make Lemon Poppy Seed Cookies, adapted from Annie’s Eats. These cookies are delicate, flavorful and quite the complement to a cup of tea. They remind me of the Lemon Loaf I recently made, only these cookies are much sweeter and have a crunchy texture. These tender bite-sized treats are drizzled with a lemony glaze that puts them at the top of my favorite desserts list. Next time life gives you lemons, you know what to do :)

The Ingredients…*

For the cookies:
1½ cups all-purpose flour
½ tsp. baking powder
¼ tsp. salt
1 tbsp. poppy seeds
8 tbsp. unsalted butter, at room temperature
2/3 cup sugar
2 tbsp. lemon zest
1 large egg
For the glaze:
½ cup confectioners’ sugar
1-2 tbsp. freshly squeezed lemon juice
The Instructions…*
First make the cookies…
(1) Preheat the oven to 350° F, then line 2 baking sheets with parchment paper
(2) In a small bowl, whisk together the flour, baking powder, salt and poppy seeds; Set aside
(3) In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter and sugar on medium-high speed until light and fluffy, about 2 minutes
(4) Mix in the lemon zest and egg until blended
(5) Mix in the dry ingredients on low speed just until incorporated
(6) Drop balls of dough onto the prepared baking sheets about 2 inches apart
(7) Bake for 9-11 minutes or until cookies are set and just beginning to brown at the edges (do not let the tops brown)
(8) Allow to cool on the baking sheet for 2 minutes, and then transfer to a wire rack set over wax paper to cool a bit before glazing
And then make the glaze…
(1) Whisk together the confectioners’ sugar and 1 tablespoon of lemon juice; Add more lemon juice if necessary, just until the glaze has reached a consistency good for drizzling over the cookies
(2) Glaze the cookies and let the glaze set before serving.
(3) Store in an airtight container and enjoy :)
