Oh my, what a week! To celebrate my new job in Chicago, the end of midterms, and the start of Spring Break, I needed something decadent, chocolatey and delicious. Of course when I saw Double Fudge Oreo Crunch Cookies posted by How Sweet it is, I knew it was a sign. A warm, gooey, quadruple fudge cookie was just what I needed! Consisting of crushed Oreos, chocolate chips, and a scoop of cocoa, these cookies are my new best friend. They are rich, chunky, chewy, and soft in the middle. Mission definitely accomplished!

1 cup butter, at room temperature
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips
1 cup crushed Oreo cookies

The Instructions…*
…makes ≈ 30 cookies
(1) Using an electric mixer, cream butter, sugar, eggs and vanilla until fluffy
(2) Add flour, cocoa powder, baking soda and salt and mix until combined
(3) Fold in chocolate chips and crushed Oreo
(4) Refrigerate dough for 2-4 hours (or more)
(5) When ready to bake, preheat oven to 350°, roll into balls or scoop with an ice cream scooper and set on baking sheet
(6) Bake at 350 for 10-12 minutes. Let cool completely and enjoy :)
