…chewy, gooey, gotta-have-‘em, chocolate chip cookies
Ever since I moved to Chicago, I’ve been introduced to a handful of new people every day. I’ve engaged in intriguing conversations with strangers on the subway, friendly faces at the grocery store, and embraced the opportunity to meet with a few dozen professionals in the Hospitality Industry. Through these networks, I’ve secured connections to multiple facets, including the opportunity to bake for a young man’s Bar Mitzvah. My roommate and I were asked to help facilitate and supervise Jonah’s celebration, but as soon as word got out about my sweet treats, I was hired to bake the desserts as well. Jonah’s favorite flavor, Mint Chocolate Chip, inspired my first creation, Mint Chocolate Chip Cupcakes (recipe coming soon), and the second was chosen simply because it is every 13-year olds favorite treat: Chocolate Chip Cookies. Ironically enough, this was the first time I’ve ever made homemade Chocolate Chip Cookies—outside of the ones I whipped up for my Chocolate Chip Cookie Dough Cupcakes.
I’m going to be completely honest, I was a little nervous with this request and wasn’t sure what recipe to go with. When I came across Katrina’s “Award Winning Chocolate Chip Cookie” recipe, I knew I had struck gold. I doubled the batch and ended up with a total of 80, chewy, gooey, buttery goodness, chocolate-stuffed cookies. I wasn’t the only one drooling over them. The cookies were gone in less than 45 minutes flat. I think I know why Katrina's Cookies are award worthy…and thank goodness I found them. They will now remain a staple in my house. Enjoy :
(Recipe from In Katrina’s Kitchen)
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup shortening (I use butter-flavored Crisco)
3/4 cups granulated sugar
3/4 cups brown sugar
1 teaspoon vanilla extract
2 eggs
1 package milk chocolate chips (about 2 cups)
(Makes 3 dozen cookies)
(1) Preheat oven to 350° F
(2) Combine flour, baking soda, and salt in a bowl; set aside
(3) Beat shortening and sugars until combined and creamy; add eggs and extract
(4) Add the dry ingredients and fold in chocolate chips
(5) Use a 2 tablespoon cookie scoop to drop dough onto baking sheet
(6) Bake at 350 for about 9 minutes, allow to cool completely and ENJOY! :)
