…crispety, crunchety, peanut-buttery cookies
This week, I promised my friend Adam I would bake a special treat for his office. I asked him and his coworker, Zack, what their favorite candy bar was. Without any hesitation, they both enthusiastically replied, “Butterfinger.” I immediately started crafting the perfect treat in my head—a mouthwatering cookie, full of chocolate chips and ‘crispety, crunchety, peanut-buttery’ Butterfingers. Mmmmmmmm, yes please! These cookies are soft, chewy and as my roommate would say, “the perfect Butterfinger crunch is waiting inside.” The chocolate chips add yet another sweet element to bite into, making for a scrumptious cookie. As the saying goes, “Nobody better lay a finger on my Butterfinger [cookie].” Seriously…they are that good ;)

2 sticks butter, softened
3/4 Cup brown sugar
3/4 Cup granulated sugar
2 eggs
1 teaspoon vanilla
3 Cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
16 mini Butterfinger (fun size) or 4 full size candy bars
1/2 Cup chocolate chips
(Makes 3 dozen cookies)
(1) Preheat oven to 375° F
(2) In a stand or electric mixer, beat butter and sugars until well combined; Slowly add in eggs and vanilla until well mixed
(3) Place flour, baking soda and salt into a large bowl; mix to combine
(4) Slowly add to wet ingredients along with the coarsely chopped Butterfingers and chocolate chips until just combined
(5) With a medium cookie scoop, scoop dough onto a Silpat lined baking sheet about 1 1/2 inches apart
(6) Bake for 9-11 minutes or until done to your liking. (Take them out right at 9 minutes for a softer cookie) Let cool for 5-7 minutes on baking sheet to set up, then transfer to a cooling rack to finish cooling…ENJOY! :)
