Sittie’s Sunday Morning Pancakes…*
…my favorite family tradition
For as long as I can remember, Sunday mornings were for pancakes--light, fluffy, and slightly sweet pancakes. These pancakes didn’t come from a box mix, nor did they come frozen. They were perfectly crafted by the woman who has fed, cared, and unconditionally loved my family for many generations—my grandmother, my Sittie. Her recipe creates the most delicate and delicious pancakes you will ever taste! Stuff them with your favorite fruit (or my favorite, chocolate chips), stack them as tall as you’d like, and top them with a sweet maple syrup for a memorable Sunday morning breakfast : )

Her recipe creates the most delicate and delicious pancakes you will ever taste! Stuff them with your favorite fruit (or my favorite, chocolate chips), stack them as tall as you’d like, and top them with a sweet maple syrup for a memorable Sunday morning breakfast : )
The Ingredients…*
9 cups flour
1/2 cup baking powder
1 cup sugar
4 1/2 teaspoons salt
First make the pancake mix…
(1)Mix and sift all ingredients together in a large bowl
(2) Store in airtight container for up to 6 months
And when you’re ready for pancakes…
(1) Set griddle to about 375°
(2) Whisk together 1 cup of milk, 1 egg and 1 tablespoon oil in medium bowl
(3) Add enough dry mix for thin batter (≈1.5-2 cups)….or more for thicker pancakes
(4) For each pancake, pour ≈1/4 – 1/2 cup batter onto hot griddle
(5) Turn pancakes just once as soon as the pancakes puff slightly and bubbles on top just begin to break
(*) If adding fruit or chocolate chips, add a small handful right before flipping the pancakes over
(6) Once the pancakes are cooked to perfection, top with a dollop of butter, serve with maple syrup and enjoy :)

Just a few more tips for perfect pancakes…
(*) Don't over mix the batter; this will cause the pancakes to turn out tough
(*) Don't let the griddle or skillet get too hot! This will cause the pancakes to burn before they're cooked through
(*) Don't press down on the pancakes while they're cooking
(*) Don't over flip. If you let the pancakes cook until golden on the first side, there's no need to flip multiple times ;)
