Cookie Dough Love Bites…*

For me, the best part of baking cookies (or anything for that matter) is sampling the dough. I actually think there are times when I “bake” cookies just for the dough. I may be addicted, but that’s beside the point. The good news is that this safe-to-eat cookie dough is eggless, meaning you can eat all you want and not get sick---well, actually I wouldn’t recommend doing that. Regardless, this dough is easy to make, incredibly tasty, and can be stored in the freezer for later use. The best part about this recipe is that it can be replicated for any occasion by shaping the dough in various forms and by using various colored candy melts (available at craft stores, specialty baking stores, and online). Although, next time I make these, I think I will substitute the waxy melts for a rich dark chocolate. Oh la la, I can taste it now….!

The Ingredients…*
Recipe adapted from Sweet Tooth
2 1/2 cups all-purpose flour
1 teaspoon salt
1/4 teaspoon baking soda
1 cup butter, at room temperature
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla
1/3 cup milk
1 cup mini semi-sweet chocolate chips
1 bag red candy melts

The Directions…*
(1) Beat butter and sugars together with an electric mixer until light and fluffy
(2) Add milk and vanilla
(3) Stir in flour, baking soda and salt and mix on low speed (or by hand) until incorporated
(4) Stir in chocolate chips
(5) Cover and chill dough for 1 hour
(6) Form dough into hearts or balls and arrange on a baking sheet lined with waxed paper
(7) Place sheets in freezer and let chill for 30 minutes
(8) Melt chocolate candy coating in a double boiler or in microwave according to package directions
(9) Dip cookie dough hearts into candy coating to cover; Tap fork on side of pan to remove any excess coating, and return to waxed paper-lined baking sheets
(10) Let harden and enjoy or wrap up and give to your special valentine <3

Even though these truffles are quite tasty, I wouldn’t recommend making them unless you have time on your hands. I tried rushing the dipping process and they started to harden before I was finished—resulting in a messy, uneven and candle-like look. Take your time and be patient. If you prefer chocolate over vanilla flavored candy melts, just toss a handful of chocolate chips in the microwave and dip away! As my sister joked, “Love isn’t always easy—it can be messy and rough, but at the end of the day, it’s pretty darn sweet!” hehe….Happy Valentine’s Day!
